HEALTHY Flourless Peanut Butter & Jelly Sandwich Cookies🥜🍓🥄🍪
These tasty cookies are like a PB&J sandwich in cookie form! Only healthier! They are protein packed and full of flavor but low in WW points! They are also kiddo friendly! They make a great snack, dessert or even quick breakfast on the go!
How to Make This:
Ingredients:
PBfit (8 servings or 128g)
3/4 cup water
1/2 cup lakanto maple syrup
1 large egg
3 cups old-fashioned oats
1 teaspoon baking soda
For the filling:
PBfit (2 servings or 32g)
3 Tbsp water
¼ cup smuckers sugar free preserves
Instructions:
In a small bowl, make your peanut butter for the dough by mixing 128g peanut butter powder with 3/4 cup water until smooth.
To your mixer, add peanut butter and Lakanto maple syrup until smooth.
Beat in the egg until well combined.
Add the oats and baking soda and beat on low speed until just combined.
Using a 2 tbsp cookie scoop, drop heaping one-tablespoon sized portions of dough a few inches apart on the prepared baking sheets. You should have 20 scoops.
Flatten the top of each scoop of dough with the top of your hand.
Bake cookies in preheated oven at 350F for 7-8 minutes or until they are set.
Let cool on cookie sheets about 5 minutes before transferring to a wire rack to cool completely.
Once cookies have cooled completely, mix up remaining 32g peanut butter powder with 3 Tbsp water.
Turn all cookies over and spread the bottoms of 10 with of peanut butter (about a rounded teaspoon each) and the bottoms of the other with preserves (about a rounded teaspoon each)
Top the peanut butter halves with the preserve halves.
