EASY NO-BAKE Mini Raspberry Protein Cheesecakes❤️

These easy no bake mini cheesecakes have minimal ingredients and come together quick! They are bursting with raspberry flavor and packed with protein but low in calories! They hit the spot when you are craving something sweet like cheesecake but want to stay within your WW points!

How to Make This:

Ingredients:

  • 7 Full Graham crackers (109 g)

  • 2 tbsp coconut oil, melted (30 mL)

  • 2 tbsp zero-calorie classic granulated sweetener (lakanto)

  • 1 cup plain Fat Free Greek yogurt

  • 8 oz low-fat cream cheese

  • 1 package (family size, .6 or .88oz) sugar-free raspberry flavored gelatin mix

  • 1 scoop (31.5 g) vanilla protein powder (I’m using Isopure zero carb simply vanilla)

  • 1/4 cup zero-calorie sweetener (lakanto)

  • 1 tsp vanilla extract

  • 1/2 cup(80 g) fresh or frozen raspberries, mashed

  • Optional to garnish: fresh raspberries and whipped cream

Instructions:

  1. To make the crust, crush up graham crackers and mix with melted coconut oil and 2 Tbsp granulated sweetener.

  2. Press into muffin tins and refrigerate while making filling.

  3. For the filling: to a medium bowl, or mixer, add cream the cream cheese, Greek yogurt, gelatin mix, protein powder, 1/4 cup granulated sweetener, vanilla extract and mashed raspberries together until well combined.

  4. Fill each muffin cup with about 1/4 cup of filling.

  5. Refrigerate for at least 4 hours or overnight.

  6. Garnish with fresh raspberries and whipped cream before serving, if you wish.

  7. Enjoy!
