Easy Mini Lime Cheesecakes

These mini lime cheesecakes are light and have a fresh citrus flavor that is perfect for summer! They are also very easy to make and hit the spot when you are craving something sweet like cheesecake but want to stay within your WW points!

How to Make This:

Ingredients:

  • 1 8 oz block of light cream cheese

  • 1-2 Tbsp lime juice 2 tsp lime zest (I used the zest of 2 limes, reserving some to top with)

  • 1 tsp vanilla 2 egg whites

  • 1/2 cup granulated sugar (sugar alternative works too)

  • 1/2 cup fat free Greek yogurt (you can use fat free sour cream)

  • 12 reduced fat Nilla wafers

  • 12 Tbsp aerosol whipped topping

Instructions:

  1. Cream cream cheese until light and fluffy.

  2. Add remaining ingredients except for the Nilla wafers, and mix until well combined.

  3. Place a Nilla wafer in the bottom of each muffin cup.

  4. Evenly pour batter into 12 muffin cups, about 2 Tbsp of batter each.

  5. Bake at 375 for 15-18minutes (I did closer to 20 and found they were slightly over cooked)Let cool completely then top with whipped topping and lime zest.

  6. Enjoy!
