EASY Skinny Pumpkin Delight🎃
This lightened up version of Pumpkin delight is easy to make and delicious! It makes a perfect dessert for Thanksgiving! Everyone will enjoy it and you don't have to feel guilty about eating dessert!
How to Make This:
Ingredients:
1 cup All-purpose flour
8 Tbsp Brummel & Brown Spread Made with Yogurt
3⁄4 cup Chopped pecans, 1/2 cup for crust, 1/4 to top
1⁄2 cup Lakanto Monkfruit Sweetener, powdered
8 oz Cool Whip Fat Free Whipped Topping
3 Tbsp Lakanto Classic Monkfruit Sweetener With Erythritol
1 1⁄2 cup Plain unsweetened almond milk
2 packages Fat free sugar free instant vanilla pudding and pie filling mix
15 oz (2 cups) Pumpkin puree
1 tsp Pumpkin pie spice (Homemade pumpkin Spice Recipe)
8 oz Low fat cream cheese
Instructions:
Chop pecans.
In a medium bowl, add flour, 1/2 cup pecans, melted butter spread, and classic sugar substitute.
Stir together until well combined.
Spray a 13X9 baking dish with cooking spray.
Pour in crust mixture and press into bottom of dish.
Bake at 350 F for about 12-15 minutes, or until slightly browned. Don’t overcook or the crust will be too hard.
Let cool completely.
For the cream cheese layer, combine cream cheese and powdered sugar substitute until creamy.
Fold in 1 cup, or 1/3 or the whipped topping.
For the Pumpkin layer, mix together milk and pudding mixes until smooth. I do this in a blender to get the best result.
Add to a medium bowl, the pudding, pumpkin, and pumpkin pie spice and stir until well combined.
Fold in 1 cup or 1/3 of the whipped topping until combined.
Once the crust is completely cooled, spread cream cheese mixture on top, followed by the pumpkin mixture.
Spread remaining whipped topping evenly on top.
Sprinkle with remaining pecans.
Cover and refrigerate for about 4 hours for best results.
