Easy Double Crust Peach Cobbler
This cobbler starts with a 2-ingredient dough base, double crust, filled with sweet peaches. It is an easy, quick dessert with an old-fashioned flavor!
How to Make This:
Ingredients:
2 1⁄4 cups White self-rising flour, 2 cups for dough, 1/4 cup to knead and roll out dough.
1 1⁄2 cups Plain fat free Greek yogurt
2 Tbsp Lakanto Monkfruit Sweetener, powdered
2 tsp Vanilla extract, 1 for dough, 1 for filling
1 tsp lemon juice
1 large Egg, beaten
2 tsp Ground cinnamon, 1 for filling, 1 for cinnamon sugar mixture
6 Tbsp Lakanto Monkfruit sweetener, classic, 4 for filling, 2 for cinnamon sugar mixture
4 Tbsp Lakanto Brown monkfruit sweetener with erythritol
5 bsp Brummel & Brown Spread Made with Yogurt,
4 Tbsp melted, 1 for bottom of casserole dish
6-8 cups Unsweetened canned peaches
Instructions:
For the crust, mix together 2 cups flour, yogurt, 1 tsp vanilla and powdered sweetener until dough starts to form.
Knead for about 5 minutes.
Cut dough into 2 portions, roll out first portion of dough to fit the bottom of a 13X9 inch casserole dish.
In a 13X9 inch casserole dish, add 1 Tbsp of butter spread and evenly spread it on the bottom.
Place dough on top, pressing down to fit bottom of dish.
Mix 1 tsp cinnamon and 2 Tbsp Monkfruit classic together and sprinkle half of the mixture on top of bottom crust.
Set remaining aside.
For the peach filling, add drained peaches, 4 Tbsp Monkfruit classic, 4 Tbsp Brown Monkfruit, 1 tsp vanilla, remaining brummel and brown (melted) lemon juice, tsp cinnamon to a large bowl and mix together well.
Pour on bottom crust and spread out evenly.
Roll out second portion of dough to fit on top of and mostly cover peaches.
Lay on top of peaches.
Brush crust with beaten egg and sprinkle with remaining cinnamon/sweetener mixture.
Bake at 350 for 50-60 minutes or until lightly browned on top and juices are bubbling.
