Strawberry Lemon Bars
These Lightened up, easy strawberry lemon bars combine the sweet taste of fresh strawberries with the tartness of freshly squeezed lemon juice in their custard like topping. That paired with the shortbread like crust makes a delicious dessert bar, perfect for the summertime or anytime!
How to Make This:
Ingredients:
1 1⁄3 cups All-purpose flour, 1 cup for crust, 1/3 for filling
8 Tbsp Brummel & Brown Spread Made with Yogurt
6 Tbsp Lakanto Monkfruit Sweetener, powdered, 4 for crust, 2 for dusting
3⁄4 cup Fresh lemon juice
1 tsp Lemon zest- zest from 1 lemon
1 cup fresh Strawberries
1 1⁄2 cups Lakanto Monkfruit sweetener
1 tsp vanilla extract
4 large Eggs
1 tsp Baking powder (I said soda in the video but meant powder)
Instructions:
Mix together all 3 ingredients for the crust, either by hand or in a mixer.
You should end up with a cookie dough consistency.
Press dough into a 13X9 dish. I lined my dish with parchment paper first but you don't have to.
Bake at 350 for 15-20 minutes.
Zest 1 lemon to get about 1 tsp zest.
Juice lemons.
In a blender or food processor, combine the lemon juice, lemon zest, strawberries, and lakanto granulated, and blend until smooth.
Add the eggs and mix until smooth.
Add the remaining flour, and baking powder and mix in.
Once crust is baked, pour lemon mixture over and bake at 350 for about 20 minutes, or until middle is just slightly jiggly.
Let cool completely and sprinkle with powdered sugar if desired.
Cut into desired size bars.
