How to Make This:

Ingredients:

  • 1 large 29 oz can (850 g) Pure Pumpkin Puree

  • 1 ΒΎ cups (415 mL) unsweetened almond milk

  • 1 cup (200 g) Lakanto Classic Sweetener with allulose

  • 4 large eggs

  • 1 Tbsp Pumpkin Pie Spice

  • 1 tsp. Salt

  • 1 box approx. 15 oz (425 g)Yellow Cake Mix

  • 1/4 cup (28 g) chopped pecans

  • 8 Tbsp. (115 g) Light Butter Spread, completely melted

Instructions:

  1. In a large bowl, add the pure pumpkin, almond milk, Lakanto, eggs, pumpkin pie spice, and salt. Whisk until the mixture is completely smooth.

  2. Spray the inside of your 7-quart crockpot generously with non-stick cooking spray Pour the pumpkin custard mixture directly into the bottom of the greased slow cooker liner.

  3. Pour the cake mix evenly over the wet pumpkin layer.

  4. Use a spatula to gently smooth and pat down the cake mix slightly into the pumpkin layer.

  5. Sprinkle the chopped pecans evenly over the top of the cake.

  6. Drizzle the melted light butter spread in a zig-zag motion over the entire surface area.

  7. Cook on LOW for about 3-4 hours. Every crockpot is different, Check it at the 2-hour mark to see how it is looking; it is done when the edges are brown and bubbling, and the center is set with a tiny jiggle. You can also temp check with a thermometer. 175-180F is what you want.

  8. Tip: if it is collecting too much moisture, you can vent your slow cooker for the last 30-45 minutes of cooking. You can also Place a layer of paper towels tightly across the top of the slow cooker opening, then secure the lid on top. This catches rising condensation and stops water from dripping onto your cake topping.

  9. Enjoy!
