Apple Spice Cookies with Cream Cheese Frosting!🍏🍎

These soft, pillowy Apple Cookies with Cream Cheese Frosting are the ultimate autumn treat—incredibly moist, cake-like cookies infused with warm apple pie spice, hearty quick oats, and bursts of fresh, tart Granny Smith apples in every bite. They are then topped with an easy, tangy cream cheese frosting that perfectly balances the sweet spice of the apple cookie.

How to Make This:

Ingredients:

  • For the Cookies:

  • ½ cup (122 g) Unsweetened applesauce

  • ½ cup (96 g) Lakanto Monk Fruit Classic Sweetener

  • 2 Tbsp Lakanto Golden Monk Fruit Sweetener

  • 1 large Egg

  • ½ tsp Almond or Vanilla extract

  • 1 cup (125 g) All-purpose flour

  • ¼ cup (22 g) Old Fashioned rolled oats

  • 1 tsp Apple pie spice

  • ¾ tsp Baking powder

  • ¼ tsp Baking soda

  • ¼ tsp Salt

  • ½ cup (65 g) Fresh Granny Smith apple, finely diced or shredded

  • For the Frosting:

  • 4 oz (113 g) 1/3-Less-Fat (Neufchâtel) cream cheese, softened

  • 2 Tbsp Fat-free plain Greek yogurt

  • ¼ cup (30 g) Lakanto Powdered Monk Fruit Sweetener

  • ¼ tsp Vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C).

  2. In a medium bowl, add in flour, rolled oats, apple pie spice, baking powder, baking soda, and salt, and whisk until well combined. Set this bowl aside.

  3. In a mixer, add the applesauce, classic monk fruit, and golden monk fruit and blend for about 30 seconds until completely smooth.

  4. Add the egg and almond extract, and mix just until combined.

  5. Pour your dry ingredients directly into the mixer bowl. To prevent overmixing, mix just until combined and the flour streaks are no longer visible.

  6. Gently hand-fold in diced apples.

  7. Line your baking sheet with parchment paper.

  8. Use a 2-tablespoon cookie scoop to drop mounds onto the baking sheet.

  9. Bake at 350°F for 8 to 12 minutes or until tops look set and spring back lightly to a gentle touch. Let them cool completely.

  10. For the frosting: Add the light cream cheese, Greek yogurt, powdered monk fruit, and ¼ tsp vanilla to your mixer. Whisk until completely smooth, light, and creamy.

  11. Ice your completely cooled cookies with roughly 1/2 Tbsp of frosting each.

  12. Finish with an optional light dust of extra apple pie spice!

  13. Enjoy!
