Cranberry White Chocolate Oatmeal Muffins
Skinny Easy oatmeal muffins with the sweet and tart combination of cranberries and white chocolate!
How to Make This:
Ingredients:
1 cup All-purpose flour
1 cup Uncooked rolled oats
1 1⁄2 tsp Baking powder
1⁄2 tsp Table salt
1⁄2 tsp Ground cinnamon
1 large Egg
1 cup Member's Mark Nonfat plain Greek yogurt
1⁄2 cup brown calorie free sweetener ( I used Truvia Sweet complete brown calorie free sweetener)
1⁄4 cup Unsweetened applesauce
1⁄2 cup Kroger 50% Less sugar dried cranberries
70 gm (5 servings) Lily's White Chocolate Style Baking Chips
Instructions:
In a medium bowl, combine flour, oats, sweetener, baking powder, salt and cinnamon together.
In a separate bowl, mix together yogurt, egg and applesauce.
Pour dry ingredients into wet and mix just until incorporated and no dry ingredients are visible.
Fold in cranberries and white chocolate chips.
Equally distribute batter into 10 lined spots of a muffin pan.
Bake at 375 for 20-25 minutes.
