Lightened Up Peppermint Crownies
These easy, lightened up cookies are like a brownie and cookie in one! They are low in points and calories and make a perfect Holiday cookie for Christmas!
How to Make This:
Ingredients:
1 cup All-purpose flour
1⁄2 cup Unsweetened cocoa powder
1⁄2 tsp Baking soda
1 large Egg
4 Tbsp light butter spread (I used Brummel & Brown Spread Made with Yogurt)
1⁄4 cup Unsweetened applesauce
1⁄3 cup no calorie white granulated sweetener (I used Monkfruit sweetener with erythritol)
1⁄3 cup no calorie brown sweetener (I used Monkfruit sweetener with erythritol, golden)
1/2- 1 tsp Peppermint extract (I made them again with 1/2 tsp and preferred that amount)
Instructions:
In a medium bowl, mix together flour, cocoa powder and baking soda.
In a mixer, add in your butter spread and 2 sweeteners and mix well.
Add in applesauce, egg and peppermint extract and mix until well combined.
Slowly add in flour mixture until combined.
Drop dough by about 2 Tablespoon amounts onto a lined cookie sheet and bake at 350F for 10-12 minutes.
Let cool on cookie sheet for 10 minutes.
