Cranberry Pumpkin Bars
These cranberry pumpkin bars are a perfect Fall treat.They are a delicious combination of pumpkin, cranberries and fall spices! Not only are they delicious, they are Weight Watcher friendly.
How to Make This:
Ingredients:
1 cup packed light brown sugar
4 Tbsp reduced calorie margarine
1 cup canned pumpkin puree
1 lg egg
1 egg white
1/3 cup buttermilk (low fat)
1 1/4 cups all purpose flour
1 1/2 cups uncooked rolled oats
1 Tbsp pumpkin pie spice
1/2 tsp baking soda
1/2 tsp salt
2/3 cup dried cranberries
Instructions:
Heat oven to 350.
Prepare a 9X13 baking pan with cooking spray.
In a large bowl or mixer, cream sugar and margarine together.
Beat in egg, egg white, pumpkin puree and buttermilk.
In Medium bowl, combine flour, oats, pumpkin pie spice, baking soda and salt.
Mix into pumpkin mixture just until moistened.
Fold in cranberries.
Pour batter into pan and bake 25-30 minutes ore until center springs.
