Triple Berry Banana Bread Baked Oatmeal
Healthy, sweet and delicious start to your day!
How to Make This:
Ingredients:
2 cups Quaker Quick Oats 1 Minute oats
1 tsp Baking powder
2 tsp Ground cinnamon
1⁄2 tsp Table salt
1⁄4 tsp Ground nutmeg
3 medium Ripe Bananas
2 cups Plain unsweetened almond milk
2 large Eggs
1⁄4 cup Lakanto Monkfruit sweetener with erythritol, golden
1 tsp Vanilla extract
2 cups Member's Mark Natural fresh frozen triple berry blend
Instructions:
In a medium bowl, mix together the oats, cinnamon, salt, and nutmeg.
In a large bowl, add bananas and mash up.
Add in the remaining ingredients, minus the berries, until well combined.
Pour dry ingredients into banana mixture and mix in.
Spray a 9X9 baking dish with cooking spray and pour in oatmeal.
Top with berries and bake, uncovered, at 375 F for 50-60 minutes or until oatmeal is slightly browned on top and set in the middle.
