Triple Berry Banana Bread Baked Oatmeal

Healthy, sweet and delicious start to your day!

How to Make This:

Ingredients:

  • 2 cups Quaker Quick Oats 1 Minute oats

  • 1 tsp Baking powder

  • 2 tsp Ground cinnamon

  • 1⁄2 tsp Table salt

  • 1⁄4 tsp Ground nutmeg

  • 3 medium Ripe Bananas

  • 2 cups Plain unsweetened almond milk

  • 2 large Eggs

  • 1⁄4 cup Lakanto Monkfruit sweetener with erythritol, golden

  • 1 tsp Vanilla extract

  • 2 cups Member's Mark Natural fresh frozen triple berry blend

Instructions:

  1. In a medium bowl, mix together the oats, cinnamon, salt, and nutmeg.

  2. In a large bowl, add bananas and mash up.

  3. Add in the remaining ingredients, minus the berries, until well combined.

  4. Pour dry ingredients into banana mixture and mix in.

  5. Spray a 9X9 baking dish with cooking spray and pour in oatmeal.

  6. Top with berries and bake, uncovered, at 375 F for 50-60 minutes or until oatmeal is slightly browned on top and set in the middle.

  7. Enjoy!
