SKINNY Lemon Ricotta Pancakes ๐Ÿ‹๐Ÿฅž

These Lemon Ricotta Pancakes are perfect for when you are craving soft and delicious pancakes with a touch of lemon flavor! The ricotta not only adds extra protein, it also adds a fluffy, soft texture and a richness, while the lemon juice and zest adds a light bright flavor. These are perfect for spring and summertime or anytime!

How to Make This:

Ingredients:

  • ยพ cup cup part skim ricotta cheese (186 g)

  • 1 1/2 cup all-purpose flour

  • 2 large eggs (separated)

  • 3 Tbsp lakanto classic (or calorie free sweetener of choice)

  • 1 teaspoon baking powder

  • 1 cup unsweetened almond milk plus 1 Tbsp lemon juice to make buttermilk

  • Zest of 1 lemon

  • 2 tablespoons fresh lemon juice

  • 1 teaspoon vanilla extract

  • ยฝ tsp salt

  • 1 tsp olive oil for the pan

Instructions:

  1. Make buttermilk by stirring 1 Tbsp lemon juice into milk, and letting set for 5 minutes.

  2. Zest and juice lemon.

  3. In a medium bowl, add in flour, baking powder, Sweetener, and salt.

  4. In a large bowl, add in egg yolks (keeping egg whites for later), ricotta, milk, vanilla, lemon zest, and 2 Tbsp lemon juice. Stir until combined.

  5. In a mixer, beat the egg whites until soft peaks form. Mine took about 3 minutes.

  6. Slowly add dry ingredients to the buttermilk mixture and stir until just combined.

  7. Gently fold egg whites in until no white streaks remain.

  8. Heat a non-stick skillet or griddle over medium heat.

  9. Spritz with oil.

  10. Pour about ยผ cup batter per pancake.

  11. Cook until bubbles form, about 2-3 minutes, then flip and cook another 1-2 minutes.

  12. Enjoy!
