SKINNY Lemon Ricotta Pancakes 🍋🥞
These Lemon Ricotta Pancakes are perfect for when you are craving soft and delicious pancakes with a touch of lemon flavor! The ricotta not only adds extra protein, it also adds a fluffy, soft texture and a richness, while the lemon juice and zest adds a light bright flavor. These are perfect for spring and summertime or anytime!
How to Make This:
Ingredients:
¾ cup cup part skim ricotta cheese (186 g)
1 1/2 cup all-purpose flour
2 large eggs (separated)
3 Tbsp lakanto classic (or calorie free sweetener of choice)
1 teaspoon baking powder
1 cup unsweetened almond milk plus 1 Tbsp lemon juice to make buttermilk
Zest of 1 lemon
2 tablespoons fresh lemon juice
1 teaspoon vanilla extract
½ tsp salt
1 tsp olive oil for the pan
Instructions:
Make buttermilk by stirring 1 Tbsp lemon juice into milk, and letting set for 5 minutes.
Zest and juice lemon.
In a medium bowl, add in flour, baking powder, Sweetener, and salt.
In a large bowl, add in egg yolks (keeping egg whites for later), ricotta, milk, vanilla, lemon zest, and 2 Tbsp lemon juice. Stir until combined.
In a mixer, beat the egg whites until soft peaks form. Mine took about 3 minutes.
Slowly add dry ingredients to the buttermilk mixture and stir until just combined.
Gently fold egg whites in until no white streaks remain.
Heat a non-stick skillet or griddle over medium heat.
Spritz with oil.
Pour about ¼ cup batter per pancake.
Cook until bubbles form, about 2-3 minutes, then flip and cook another 1-2 minutes.
