Crock-Pot Crustless Taco Quiche 🌮🧀🥚🍅🫑🫘

This protein packed quiche is full of the savory, spiced flavors of tacos! It makes an easy meal for breakfast, lunch or dinner!

How to Make This:

Ingredients:

• 1 pound lean ground beef

• 1 medium onion, chopped

• 1 red pepper, chopped

• 1 tsp minced garlic

• 2 Tbsp taco seasoning

• 12 large eggs

• 1/2 cup almond milk

• 1 cup salsa

• 1 can rotel

• 1 can black beans, rinsed and drained

• 1/2 bunch green onion, chopped

• ¼ cup chopped cilantro

• 1 ½ cups shredded cheddar cheese (6oz) Cooking spray
  
  

Instructions:

1. In a large skillet, add ground beef, onion, and bell pepper. Cook hamburger until browned and veggies are slightly softened.

2. Once it is browned, add garlic and cook an additional minute or 2.

3. Add taco seasoning and stir well Set aside to cool slightly.

4. In a large bowl, whisk together eggs, almond milk.

5. Stir in salsa, rotel, black beans, and green onions and cilantro.

6. Fold in cheese and burger and veggies.

7. Pour in a crock pot (mine is a 7 qt) that has been sprayed with cooking spray. I also used a crock pot liner but you don't have to.

8. Set to low, cover and cook for 4-5 hours or until eggs are set.

9. Enjoy!
