Skinny Breakfast Tater Tot CasserolešŸ„ššŸ§€

I meal prepped a WW friendly breakfast with this delicious, family friendly, easy Tater Tot Casserole!

How to Make This:

Ingredients:

  • 12 large Eggs

  • 1⁄2 cup Unsweetened vanilla almond milk

  • 1 medium Onion, chopped

  • 1 medium Green bell pepper, chopped

  • 1 medium Red bell pepper, chopped

  • 1 oz pickled jalapens, chopped

  • 1 tsp Dry mustard

  • 1⁄2 tsp Table salt

  • 1⁄2 tsp Paprika

  • 1⁄2 tsp Granulated garlic

  • 1⁄4 tsp Black pepper

  • 1 cup Lucerne Finely shredded Mexican four cheese blend

  • 1⁄4 cup Green onions (scallions), chopped, plus a couple of Tablespoons for topping

  • 8 oz Smithfield Anytime Favorites Ham, Diced, 97% Fat Free

  • 20 oz Tater Tots

  • Cooking spray

Instructions:

  1. Heat a large pan on med/high heat. Add ham, onions and bell peppers and cook until ham is heated through and onions and peppers are softened.

  2. While ham and veggies are cooking: In large bowl, add eggs, almond milk, jalapenos (or green chilies) , garlic, dry mustard, paprika, salt and pepper and whisk together well.

  3. Stir in 1/2 cup of the cheese and green onions.

  4. Spray a 9x13 baking dish with non-stick cooking spray.

  5. Add in ham and veggies.

  6. Pour egg mixture over the top.

  7. Layer tater tots on top.

  8. Bake uncovered, at 350F, until the egg mixture for about 40-45 minutes or until eggs are set and the tater tots are golden brown.

  9. Sprinkle evenly with remaining 1/2 cup cheese and remaining green onions.

  10. Return to the oven for about 5-7 minutes or until the cheese is melted.

  11. Remove from the oven.

  12. Enjoy!
