EASY Skinny Pecan Pie Baked Oatmeal🄧

I meal prepped a WW friendly breakfast with this Holiday inspired delicious and easy Skinny Pecan Pie Baked Oatmeal! It has all the flavors of pecan pie in a healthy baked oatmeal!

How to Make This:

Ingredients:

  • 2 cups Uncooked old fashioned rolled oats

  • 1 1⁄2 tsp Baking powder

  • 1⁄2 tsp Table salt

  • 1 tsp Ground cinnamon

  • 1 tsp Vanilla extract

  • 2 cups Plain unsweetened almond milk

  • 2 large Eggs

  • 1⁄2 cup Mott's Unsweetened applesauce

  • 2⁄3 cup Lakanto Maple flavored syrup - 1/3 for oatmeal, 1/3 for topping 1⁄8 cup

  • Lakanto Monkfruit sweetener with erythritol, golden

  • 2⁄3 cup Kroger Pecan Pieces

  • 2 Tbsp Brummel & Brown Spread Made with Yogurt

  • Cooking spray

Instructions:

  1. In a medium bowl, mix together the oats, cinnamon, baking powder and salt.

  2. In a large bowl, add in the eggs, almond milk, applesauce, 1/3 cup maple syrup and mix until well combined.

  3. Pour dry ingredients into wet mixture and mix in.

  4. Spray a 8X8 baking dish with cooking spray and pour in oatmeal.

  5. Bake, uncovered, at 375.

  6. At about the 25 minute mark of baking the oatmeal, make your pecan topping.

  7. In a small pan, melt butter spread and add in remaining maple syrup and Lakanto brown.

  8. Stir and cook on medium heat for about 5-7 minutes.

  9. Add in pecans and stir.

  10. At about 35 minutes of bake time for your oatmeal, remove and pour the pecan mixture on top.

  11. Return to oven and continue to bake, uncovered for an additional 10-15 minutes or until oatmeal is set in the middle (Total bake time of 45-50 minutes).

  12. Store leftovers in an airtight container in the fridge for 5-7 days. Microwave to reheat.

  13. Enjoy!
