Pumpkin Spice Sheet Pan Pancakes
Fall inspired pumpkin spice sheet pan pancakes that come together in minutes and have easy cleanup!
How to Make This:
Ingredients:
2 1⁄2 cups Aunt Maple's Protein pancake & waffle
2 tsp Pumpkin pie spice
4 large Eggs
1 cup Canned pumpkin puree
1 cup Plain fat free Greek yogurt
2 tspVanilla extract
6 Tbsp Lakanto Monkfruit sweetener with erythritol, golden
1⁄3 cup chopped pecans 1⁄2 cup
Plain unsweetened almond milk *I only used 1/4 in the video but would recommend 1/2
Instructions:
In a medium bowl, stir together the pancake mix and pumpkin pie spice.
In a large bowl, combine the remaining ingredients, except for the pecans, until well combined.
Stir in dry ingredients until incorporated.
Line a 13X 18 inch cookie sheet with parchment paper and pour your batter on the pan and spread out evenly.
Sprinkle with pecans and bake at 425 F for about 15 minutes.
