Pumpkin Spice Sheet Pan Pancakes

Fall inspired pumpkin spice sheet pan pancakes that come together in minutes and have easy cleanup!

How to Make This:

Ingredients:

  • 2 1⁄2 cups Aunt Maple's Protein pancake & waffle

  • 2 tsp Pumpkin pie spice

  • 4 large Eggs

  • 1 cup Canned pumpkin puree

  • 1 cup Plain fat free Greek yogurt

  • 2 tspVanilla extract

  • 6 Tbsp Lakanto Monkfruit sweetener with erythritol, golden

  • 1⁄3 cup chopped pecans 1⁄2 cup

  • Plain unsweetened almond milk *I only used 1/4 in the video but would recommend 1/2

Instructions:

  1. In a medium bowl, stir together the pancake mix and pumpkin pie spice.

  2. In a large bowl, combine the remaining ingredients, except for the pecans, until well combined.

  3. Stir in dry ingredients until incorporated.

  4. Line a 13X 18 inch cookie sheet with parchment paper and pour your batter on the pan and spread out evenly.

  5. Sprinkle with pecans and bake at 425 F for about 15 minutes.

  6. Enjoy!
