Pumpkin & Oat Energy Bar Cookies/Breakfast Cookies

These healthy, homemade energy bar cookies make for a great alternative to store bought energy bars. They also make for a quick and easy breakfast on the go!

How to Make This:

Ingredients:

  • 2 cups Quaker Quick Oats 1 Minute oats, dry

  • 1⁄2 cup Dried cranberries (50% less sugar)

  • 2⁄3 cups Green pumpkin seeds (pepitas)

  • 1⁄4 cups Ground flaxseed meal

  • 2 Tbsp Dried chia seeds

  • 1 tsp Pumpkin pie spice my homemade recipe

  • 1⁄2 tsp Table salt

  • 1⁄4 cups Unsweetened applesauce

  • 1⁄2 cup Pumpkin puree

  • 2 Tbsp Coconut oil, melted

  • 2 large Eggs, lightly beaten

  • 4 Tbsp Maple syrup (WW Pts and nutritional info factored with Maple syrup but I now use zero calorie lakanto maple flavored syrup to lower pts more)



Instructions:

  1. In a small bowl warm coconut oil in microwave.

  2. In a large bowl combine oats, cranberries, pumpkin seeds, ground flax, chia seeds, pumpkin pie spice and salt.

  3. Add pumpkin puree, apple sauce, eggs and maple syrup to melted coconut oil and mix until fully combined.

  4. Stir pumpkin mixture into dry mixture until combined.

  5. On a cookie sheet lined with parchment paper, drop about 1/4 cup sized scoops of the mixture onto a cookie sheet and flatten (I used a glass sprayed with cooking spray to flatten cookies).

  6. Bake at 350 F for about 15-20 minutes until edges are lightly browned.

  7. Let cookies cool on baking sheet.

  8. Enjoy!
