Pumpkin Spice Pancakes

I love making these easy pumpkin spice pancakes. They are light and fluffy with with warm Fall spices that make them perfect for the Fall season!🍂🍁

How to Make This:

Ingredients:

  • 1 cup uncooked rolled oats, ground up into flour ( you can also use 1 cup store bought oat flour)

  • 1/4 cup All-purpose flour

  • 1/2 cup Plain fat free Greek yogurt

  • 1/2 cup Canned pumpkin

  • 2 lg Eggs

  • 1 tsp Baking powder

  • 1/2 tsp Baking soda

  • 1/2 tsp Table salt

  • 1 tsp Vanilla extract

  • 1 tsp Pumpkin pie spice

  • 3 Tbsp Maple syrup (a calorie free sweetener can be substituted if you wish)

  • 1-2 Tbsp Fat free skim milk (if needed)

  • 1 Tbsp powdered sugar (I factored this into the recipe builder and it doesn't affect the points with or without it)

  • cooking spray

Instructions:

  1. In a medium sized bowl, mix together eggs, greek yogurt, pumpkin, vanilla and maple syrup.

  2. In a small bowl, mix together oat flour, all purpose flour, baking powder, baking soda, salt and pumpkin pie spice.

  3. Mix dry ingredients into wet until combined, add 1-2 Tbsp of milk if needed.

  4. Heat a large, nonstick frying pan on medium heat, spray with cooking spray and pour batter by 1/4 cups into heated pan.

  5. Cook for 4-5 minutes, flip and cook another 1-2 minutes.

  6. Sprinkle lightly with powdered sugar.

  7. Enjoy!
