Easy Breakfast Casserole

Quick and easy, high protein breakfast casserole!

How to Make This:

Ingredients:

  • 12 large eggs

  • 1/4 cup Kroger Reduced fat 4 cheese Mexican blend finely shredded cheese

  • 1/4 cup shredded Part-skim mozzarella cheese

  • 18 slices Canadian Bacon, chopped up

  • 10 oz Fresh baby spinach

  • 8 oz Fresh mushrooms, sliced

  • 1 medium bell pepper, chopped

  • 1 medium red onion, chopped

  • 1 tsp Garlic powder

  • 1 tsp Dry mustard

  • Pepper and salt to taste

Instructions:

  1. In a large bowl, beat 12 eggs.

  2. Add remaining ingredients and mix well.

  3. Pour in prepared 13X9 casserole dish and bake at 350 for 30-35 minutes or until eggs are set up.

  4. Enjoy!
