Pumpkin Spice Oatmeal Breakfast Bars
These easy pumpkin oatmeal breakfast bars are like a combination of baked oatmeal and a pumpkin cake or muffin. They are an easy and quick meal prep for breakfasts on the go. They also make a great snack!
How to Make This:
Ingredients:
2 1⁄2 cups Quaker Quick Oats 1 Minute oats, dry, divided
1 1⁄2 tsp Pumpkin pie spice
1⁄4 tsp Baking soda
1⁄2 tsp Baking powder
1⁄4 tsp Table salt
1 Tbsp Coconut oil
8 fl oz Plain unsweetened almond milk
1⁄2 cup Pumpkin puree
1⁄4 cup Lakanto Monkfruit sweetener with erythritol, golden
2 large Eggs
1 tsp Vanilla extract
1⁄2 cup Unsweetened applesauce
3 Tbsp Green pumpkin seeds (pepitas)
1⁄3 cup Kroger 50% Less sugar dried cranberries
Instructions:
Add 1 cup oats to a food processor or blender then process until oats have turned into flour. Set aside (you could also use an oat flour.)
In a medium bowl, add oat flour and remaining 1-1/2 cups oats, baking powder, baking soda, salt and pumpkin pie spice, then stir to combine.
Get your coconut oil melted and set aside.
In a large bowl, add in almond milk, Lakanto brown, applesauce, vanilla, lightly beaten eggs, pumpkin and coconut oil and whisk together well.
Stir in dry ingredients until combined.
Fold in cranberries then pour batter into prepared 9X9 baking pan.
Sprinkle pumpkin seeds on top and bake at 350F for 35-40 minutes, until the center has set.
Cool and cut into bars.
Store leftovers in an airtight container in the fridge for 5-7 days.
