Ham and Cheese Egg Muffins
I wanted to use up some of my Christmas ham leftovers and made up some of these easy, protein packed egg muffins! They are low in points but very filling!
How to Make This:
Ingredients:
3⁄4 cup (4 oz)Cooked and chopped ham
1⁄2 cup Reduced fat 4 cheese Mexican blend finely shredded cheese
10 large Eggs
1⁄2 tsp Granulated garlic
1⁄2 tsp Onion powder
1⁄4 tsp Black pepper
1⁄2 tsp Kosher salt
1 tsp Dry mustard or dijon
1 tsp Dried parsley
Instructions:
In a medium bowl, whisk together eggs, salt, pepper, garlic, onion powder, parsley and mustard.
Stir in ham and cheese.
Fill muffin cups about 2/3 full and bake at 400 for 13-15 minutes or until set.
