EASY Skinny Blueberry Zucchini Baked Oatmeal🫐
This delicious and easy lightened up blueberry zucchini baked oatmeal is full of seasonal flavors!
How to Make This:
Ingredients:
1 1⁄2 cups, fresh or frozen Blueberries
1 medium Uncooked zucchini, shredded
2 cups Uncooked old fashioned rolled oats
1 1⁄2 cups Plain unsweetened almond milk
2 large Eggs
1⁄2 cups Lakanto golden monkfruit sweetener with erythritol
1⁄2 cup Unsweetened applesauce
2 tsp Vanilla extract
2 tsp Ground cinnamon
1 1⁄2 tsp Baking powder
1⁄2 tsp Table salt
Cooking spray
Instructions:
In a medium bowl, mix together the oats, cinnamon, baking powder and salt. In a large bowl, add in the remaining ingredients, minus the blueberries and zucchini, mix until well combined.
Pour dry ingredients into wet mixture and mix in.
Fold in blueberries and zucchini.
Spray a 9X9 baking dish with cooking spray and pour in oatmeal.
Bake, uncovered, at 375 F for 40-50 minutes or until oatmeal is slightly browned on top and set in the middle.
Store leftovers in an airtight container in the fridge for 5-7 days. Microwave to reheat.
