EASY Hashbrown Ham Egg & Cheese Breakfast Muffins🥚🧀

These easy, protein packed breakfast muffins are the perfect WW friendly breakfast meal prep! They are low in points but the high protein in them makes them very filling!

How to Make This:

Ingredients:

  • 20 oz shredded hashbrowns

  • 1 cup shredded cheese Reduced fat - divided

  • 12 large Eggs

  • 8 oz diced ham

  • ½ cup Fat free greek yogurt

  • 1 tsp Dry mustard or dijon

  • 1/2 teaspoon black pepper-divided

  • 1 tsp Kosher salt-divided

  • 1⁄2 tsp Granulated garlic

  • 1⁄2 tsp Onion powder

  • 1 tsp Dried parsley

  • ¼ tsp Red pepper flakes

Instructions:

  1. Preheat oven to 400°F

  2. In a medium bowl, combine the hash browns, ½ cup shredded cheese, ½ tsp salt, and ¼ tsp pepper.

  3. Spray muffin tins with cooking spray.

  4. Divide and add the hashbrown mixture into the muffin pan about ⅛ cup each well.

  5. Pat it down with the back of a cup or other round container that fits into the muffin tins.

  6. Bake at 400°F for 15 to 20 minutes until the hashbrowns are crispy.

  7. While the hashbrowns are baking, Add the eggs, yogurt, ground mustard, garlic, onion powder, ½ tsp salt and ¼ teaspoon black pepper in a large measuring cup until combined.

  8. Once the hashbrowns have finished baking, evenly top with the ham, about 1 Tbsp each, followed by the remaining cheese, about ½ Tbsp each.

  9. Pour the egg mixture on top, filling to about ¾ cup full, about 1/8 cup each.

  10. Sprinkle with parsley and red pepper flakes.

  11. Bake at 400°F for 13-18 minutes or until set.

  12. Let cool for about 5 minutes before removing from muffin tin.

  13. Don’t let them remain or they may stick.

  14. Enjoy!
