Apple Cinnamon Roll Bubble Up Bake🍎🍏

This bubble up starts off with a 2 ingredient dough base for the cinnamon roll dough. It combines sweet, buttery spiced apples with the dough and then is covered in a custard-like egg mixture and baked until golden brown. It is then drizzled on top with a sweet glaze. It is like a combo of cinnamon rolls and French toast together in one delicious breakfast bake! This one is perfect for a holiday breakfast, brunch, or any morning for breakfast!

How to Make This:

Ingredients:

  • For the apple mixture:

  • 4 cups diced apples

  • ¼ cup Lakanto golden

  • 4 Tbsp butter spread

  • 1 tsp cinnamon

  • For the dough:

  • 2 cups self rising flour (plus ⅛ cup to knead and roll out dough)

  • 2 Tbsp powdered Lakanto

  • 1 1/2 cup fat free plain Greek yogurt

  • 1 Tbsp Vanilla

  • 1 egg

  • ½ cup classic Lakanto

  • 1 ½ tsp cinnamon

  • (cooking spray for pan)

  • For the Milk mixture:

  • 3 Eggs

  • 1/3 cup almond milk

  • 1 tsp vanilla

  • Glaze ingredients:

  • 1/2 cup powdered Lakanto

  • 2 Tbsp fat free plain Greek yogurt

  • 1/4 tsp vanilla

    Instructions:

  1. Preheat oven to 350°F

  2. Peel and dice apples into small pieces.

  3. In a large skillet over medium heat melt butter spread and add chopped apples, 1 tsp cinnamon, and Lakanto golden. Stir and until apples start to soften, about 10 minutes.

  4. Turn off heat.

  5. While apples are cooking; In a ziplock bag, Add ½ cup classic Lakanto and 1 ½ tsp cinnamon and shake.

  6. Set aside.

  7. To make the dough; in large bowl, combine flour and 2 Tbsp powdered sugar in a large mixing bowl.

  8. In an medium mixing bowl, combine 1 1/2 cups yogurt, 1 egg, and 1 Tbsp vanilla.

  9. Add yogurt mixture to flour mixture and stir until dough forms.

  10. Knead dough on floured surface for about 2 minutes.

  11. Once kneaded, cut dough in half and roll each half out to 1/8 inch thickness. Cut into pieces.

  12. Add dough pieces to ziplock bag and shake to cover all pieces, separating them as needed. They will stick together.

  13. Once dough is coated, add it to the cooked apples and stir in.

  14. Spray a 13X9 baking dish with nonstick spray and pour in apple cinnamon roll mixture, spreading it evenly on the bottom.

  15. In a small bowl (I used a Pyrex) add 3 eggs, milk and 1 tsp vanilla, and whisk together.

  16. Pour egg mixture over the top of cinnamon roll mixture.

  17. Bake at 350 F, uncovered for 35 minutes.

  18. Let cool for 5-10 minutes while you make your icing.

  19. To make the icing, mix the icing ingredients together in a small bowl until smooth.

  20. Drizzle the icing over bubble up while still warm.

  21. Enjoy!
