Double Chocolate Peanut Butter Banana Baked Oatmeal

This Double Chocolate Peanut Butter Banana Baked Oatmeal is full of chocolatey peanut butter flavor! It is delicious and easy to make!

How to Make This:

Ingredients:

  • 2 cups Uncooked old fashioned rolled oats

  • 1⁄2 cup Unsweetened cocoa powder

  • 1 tsp Ground cinnamon

  • 1 1⁄2 tsp Baking powder

  • 1⁄2 tsp salt

  • 2 medium-large Bananas

  • 2 cups Plain unsweetened almond milk

  • 2 large Eggs

  • 1⁄3 cup Monk fruit sweetener with erythritol(or calorie free sweetener of choice)

  • 1 tsp Vanilla extract

  • 2 oz Lily's Milk Chocolate Style Baking Chips

  • 1⁄2 cup (or 64 gms - 4 servings) PBfit Pure peanut powder

  • Water 1⁄4 cup(s), plus 1 Tbsp(more if needed to get desired consistency of peanut butter) cooking spray

Instructions:

  1. In a large bowl, mix together the oats, cocoa, cinnamon, baking powder and salt.

  2. In a medium bowl, add in bananas and mash.

  3. Add in the eggs, almond milk, and 1/3 cup sweetener and mix until well combined.

  4. Pour wet ingredients into dry ingredients and mix until well combined.

  5. Spray a 8X8 baking dish with cooking spray and pour in oatmeal.

  6. In a small bowl, mix PBfit and water together until smooth.

  7. Pour over the top of oatmeal.

  8. Sprinkle the baking chips on top. Bake, uncovered, at 350 F for 40-50 minutes or until oatmeal is set in the middle.

  9. Store leftovers in an airtight container in the fridge for 5-7 days. Microwave to reheat.

  10. Enjoy!
