Easy taco casserole with fresh salsa!

How to Make This:

Ingredients:

  • 16 oz Shady Brook Farms 93% lean ground turkey

  • 2 cups Member's Mark Mild fresh cilantro salsa, divided

  • 15 oz Canned pinto beans, drained

  • 10 oz Frozen corn kernels

  • 1 cup Kroger Reduced fat 4 cheese Mexican blend finely shredded cheese, divided

  • 1⁄2 cup Cilantro, divided

Instructions:

  1. In a small pot, heat Pinto Beans until just soft.

  2. Stir in 1 Cup Fresh Salsa and 1/4 cup Cilantro

  3. Prepare 9x13 baking dish with cooking spray.

  4. Pour in cooked Pinto Beans.

  5. In another pan, brown Ground Turkey.

  6. Add 1 Cup Salsa 1/4 cup Cilantro and stir.

  7. Stir in Frozen Corn.

  8. Add 3/4 cup Shredded Cheese, stir until melted.

  9. Spoon over Pinto Bean layer.

  10. Top with ¼ cup Shredded Cheese.

  11. Bake at 350 for 25-30 minutes.

  12. I had mine as a dip with homemade tortilla chips.

  13. Enjoy!
