Stuffed Pepper Soup

This Easy and delicious, one pot soup recipe was sent to me by a viewer. It is low in points but has a ton of flavor and is a perfect soup for the Fall and winter!

How to Make This:

Ingredients:

  • 16 oz 93% lean ground turkey

  • 1 medium red onion, chopped

  • 1 large bell pepper, chopped (I used 2 small)

  • 28 oz Canned diced tomatoes

  • 10 fl oz Condensed Soup Tomato ( you can also use tomato sauce)

  • 22 oz Frozen riced cauliflower, steamed

  • 42 oz beef broth

  • 2 packets Calorie free sweetener

  • 1 tsp Garlic powder

  • Black pepper, to taste

  • Salt, to taste

Instructions:

  1. In a large pot, add turkey, onion and bell peppers and cook on med/high until turkey is browned and veggies are softened.

  2. Steam cauliflower rice and set aside.

  3. Once your turkey is browned, add in tomatoes, broth and tomato soup, stir well.

  4. Add in cauliflower rice, garlic, sweetener and pepper and stir well.

  5. Cover and let soup simmer on low-medium heat for about 30 minutes, stirring occasionally.

  6. Enjoy!
