Skinny Cowboy Casserole
This Lightened up version of Cowboy Casserole is so good you would never know it was a skinny version! It is also very family friendly!
How to Make This:
Ingredients:
1 pound Uncooked 93% lean ground beef
1 medium Onion, chopped
1⁄4 tsp Black pepper
1 tsp minced garlic
15 1⁄2 oz Canned corn, drained
15 1⁄2 oz Canned black beans, rinsed and drained
10 1⁄2 fl oz Campbell's Condensed Soup 98% Fat free cream of chicken
1⁄2 cup Plain unsweetened almond milk
1⁄2 cup Plain fat free Greek yogurt
1 1⁄4 cup Lucerne 2% Milk reduced fat sharp Cheddar shredded cheese, divided
12 oz, about 36 tots Ore-Ida Tater tots
Instructions:
In a large skillet on Medium heat, add in ground beef and onions.
Pepper and cook until meat is browned.
Add in garlic and cook an additional minute.
Add the drained corn, drained and rinsed beans, and soup and stir well.
Turn off heat and stir in 3/4 cup cheese, milk and greek yogurt.
Spray a 9x13-inch baking dish with cooking spray.
Pour in filling and smooth out in pan.
Lay tater tots on top, followed by remaining cheese.
Bake at 375 for about 20-25 minutes or until tater tots are browned and crispy and cheese is melted.
