Crusty Meat Pie- Lightened Up

This cozy comfort food recipe was sent in to me by a viewer and I lightened it up to make it more WW friendly and lower calorie! We really enjoyed it!

How to Make This:

Ingredients:

  • 16 oz Uncooked 93% lean ground beef

  • 1 medium Onion, chopped

  • 1 medium Red bell pepper, chopped

  • 8 oz mushrooms, chopped

  • 1 tsp Granulated garlic

  • 1⁄2 tsp Black pepper

  • 1⁄2 tsp Chili powder

  • 15 1⁄2 oz Canned corn, drained

  • 10 3⁄4 fl oz Campbell's Condensed Soup Tomato, unprepared

  • For the cornbread topping:

  • 1⁄2 cup Self-rising flour

  • 1⁄2 cup Yellow corn meal

  • 1⁄4 tsp Baking soda

  • 1⁄4 tsp salt

  • 1 Tbsp Lakanto Classic Monkfruit Sweetener With Erythritol (or no calorie sweetener of choice)

  • 1⁄2 cup Fage Total 0% Nonfat Greek strained yogurt plain

  • 1⁄2 cup Plain unsweetened almond milk

  • 2 Tbsp Unsweetened applesauce

  • 1 large Egg

Instructions:

  1. In a large pan, on medium heat, add meat and veggies and cook until meat is browned and veggies are softened.

  2. Add and stir in remaining ingredients (except Cornbread ingredients).

  3. Pour mixture into 13X9 casserole dish.

  4. Cover & bake at 350 for 30 minutes.

  5. To make the Cornbread topping:

  6. In a medium bowl, mix together flour, cornmeal, salt and baking soda.

  7. In another bowl, mix together remaining ingredients.

  8. Whisk or stir together well.

  9. Slowly stir dry ingredients into wet until combined.

  10. Spoon over the meat mixture & bake uncovered for 15-20 minutes at 400F until browned and cooked through.

  11. Enjoy!
