Easy Sheet-Pan Fajitas!

How to Make This:

Ingredients:

  • 16 oz, Uncooked boneless skinless chicken breast, cut into strips

  • 2 medium, Uncooked bell peppers, cut into strips

  • 1 medium, Uncooked red onion, chopped

  • 2 Tbsp Fajita seasoning mix

  • 1⁄8 cup Olive oil

  • 8 tortillas (I use Pueblo Lindo White corn tortillas)

  • Toppings:

    salsa, ff greek yogurt, cilantro, avocado. I also squeeze fresh lime juice on top

Instructions:

  1. In a large bowl, add chicken, onions, peppers, olive oil and fajita seasoning and mix until well coated.

  2. Pour onto foil lined cookie sheet and spread out evenly.

  3. Bake at 425 for about 20 minutes or until chicken reaches an internal temperature of 165F.

  4. The last few minutes of cook time, let tortillas wrapped in foil warm in the oven.

  5. Spread 1/4 of the fajita mixture on 2 tortillas.

  6. I top mine with salsa, ff greek yogurt, cilantro, avocado. I also squeeze fresh lime juice on top.

  7. Enjoy!
