Quick and Easy Tater Tot Casserole
This lightened up version of tater tot casserole is easy, delicious and kid friendly!
How to Make This:
Ingredients:
40 Tater tots (or about 13oz)
12 oz cauliflower rice
1 lb lean ground turkey
1 can low fat cream of chicken soup
1 can green beans
1 cup 50% fat free cheese
1/2 cup skim milk
1/2 cup fat free plain Greek yogurt
1 medium onion chopped
1-2 tsp minced garlic
Ground pepper to taste
Instructions:
Pepper turkey and onions and cook on med/high heat until turkey is almost cooked completely.
Add in cauliflower rice and cook a couple of minutes more until turkey is done.
Add in garlic and cook about a minute or until fragrant.
Turn heat down to low and stir in green beans, soup, milk and yogurt.
Pour mixture into prepared 13X9 inch casserole dish.
Top with tater tots and cheese and bake uncovered at 375 for 30-35 minutes.
