Enchilada Bubble Up Casserole
We love Bubble Ups so I had to try this new one I found for Enchilada Bubble Up. It was delicious!
How to Make This:
Ingredients:
1 lb lean ground turkey medium red onion, chopped
1 (10 oz) can enchilada sauce
1 (8 oz) can tomato sauce
1 (15 oz) can black beans, drained and rinsed
One batch of 2 ingredient pizza dough: 1 1/8 cup self rising flour (1 cup for dough, 1/8 cup for kneading) 3/4 cup Nonfat plain Greek yogurt
1 cup shredded low fat Mexican Cheese (I used Kroger brand, 40% less fat)
Instructions:
Mix 1 cup of flour with Greek yogurt until well combined.
Knead dough for about 5 minutes.
Once dough is well kneaded, cut into small pieces.
In a large pan, cook turkey with onions until turkey is browned.
Pepper and salt, if you want, to taste.
Once turkey is browned, add in enchilada sauce, tomato sauce, and beans and stir well.
Add in chopped dough and stir until it start to break down a little bit.
Pour mixture into a prepared 13X9 pan and bake at 350 for 25 minutes. T
Top with cheese and bake for an additional 5-10 minutes or until the cheese is melted.
