Easy One Skillet Taco Pasta
This easy one skillet taco pasta comes together in minutes and is kid friendly!
How to Make This:
Ingredients:
1 lb lean ground turkey (I used 93% lean)
1/2 medium onion, chopped
1 cup low fat cheese (I used 40% less fat)
8 oz uncooked wheat pasta
3 cups fat free chicken broth
1 can diced tomatoes
1 can rotel
2 Tbsp taco seasoning
1/4 cup chopped cilantro
1-2 tsp minced garlic
ground pepper to taste
Instructions:
In a large skillet, on medium heat, cook turkey and onions until turkey is browned.
Add in garlic and let cook about a minute.
Add in rotel, tomatoes, chicken broth, taco seasoning, pasta, and cilantro.
Stir well, turn heat to high and let come to a boil.
Once it comes to a boil, turn heat to low and let simmer, covered, for about 20 minutes or until pasta is cooked.
Remove from heat and stir in cheese.
Enjoy!
