This easy one skillet taco pasta comes together in minutes and is kid friendly!

How to Make This:

Ingredients:

  • 1 lb lean ground turkey (I used 93% lean)

  • 1/2 medium onion, chopped

  • 1 cup low fat cheese (I used 40% less fat)

  • 8 oz uncooked wheat pasta

  • 3 cups fat free chicken broth

  • 1 can diced tomatoes

  • 1 can rotel

  • 2 Tbsp taco seasoning

  • 1/4 cup chopped cilantro

  • 1-2 tsp minced garlic

  • ground pepper to taste

Instructions:

  1. In a large skillet, on medium heat, cook turkey and onions until turkey is browned.

  2. Add in garlic and let cook about a minute.

  3. Add in rotel, tomatoes, chicken broth, taco seasoning, pasta, and cilantro.

  4. Stir well, turn heat to high and let come to a boil.

  5. Once it comes to a boil, turn heat to low and let simmer, covered, for about 20 minutes or until pasta is cooked.

  6. Remove from heat and stir in cheese.

  7. Enjoy!
