Easy Chicken Pancit
This Easy Chicken Pancit is a delicious rice noodle dish with vegetables and chicken. It is so easy to make and comes together in no time! It is a family favorite of ours! It is also a Weight Watchers friendly recipe!
How to Make This:
Ingredients:
Two boneless skinless chicken breasts, cooked and chopped (about 16 oz)
1/3 cup soy sauce (I use low sodium)
6.75 ounce package rice noodles
1 package coleslaw (1 use at least 14 oz)
8 ounces sliced mushrooms
1 chopped red onion
1 bunch green onions,
chopped 1 Tbsp olive oil
two tsp. garlic, minced
ground pepper to taste
Instructions:
Get a large pot of water heating to a boil.
Cook rice noodles according to package instructions.
In a large pan, heat on med/high a little bit of olive oil.
Once heated, add onions and mushrooms and cook until softened.
Add garlic and pepper, stir and then add coleslaw.
Turn down heat to medium and continue cooking.
Once cabbage has softened, add in green onions, soy sauce and chicken and continue to cook a few more minutes on low heat.
Add drained rice noodles, and stir.
Enjoy!
