COPYCAT Olive Garden Chicken Gnocchi Soup Lightened Up🍲 🫒

This skinny version of the popular restaurant's soup is absolutely delicious! It is full of chicken, soft pillowy gnocchi, and fresh spinach, all in a creamy base. It is full of all the flavors of the restaurant version, with less points and calories AND is much cheaper! It's also easy to make!

How to Make This:

Ingredients:

• 4 tablespoons butter- Brummel and brown

• 1 cup celery, chopped

• 1 cup carrots shredded or chopped

• 1 medium sweet onion finely chopped

• 4 tsp garlic minced

• ¼ cup flour

• 4 cups chicken broth

• 1 pound cooked chicken breast-chopped

• 1 -16 ounces package potato gnocchi

• 1 ½ cups ff half and half

• ½ cup ff Greek yogurt

• 5 cups fresh spinach- 4oz

• 1 tablespoon fresh thyme leaves or 1 teaspoon of dried thyme

• Salt & pepper to taste

Instructions:

1. In a large pot on medium heat, add butter spread and let melt.

2. Add in celery, carrots, onion, and saute until tender, about 5-8 minutes.

3. Add in garlic and cook another minute.

4. Add and stir in flour. Cook for about 2 minutes.

5. Slowly add the chicken broth in, stirring to prevent lumps.

6. Add chicken, increase heat to medium high and bring mixture to a low boil.

7. Add gnocchi, and cook until done, about 3-4 minutes (check package instructions for precise time).

8. Lower heat to low/low medium. Add half and half and greek yogurt and stir to combine.

9. Stir in spinach and continue to cook until spinach is wilted.

10. Add in thyme, and salt and pepper to taste and let continue to simmer for another few minutes.

11. Enjoy!
