Copycat Chili's🌶️Loaded Baked Potato Soup Lightened Up

This soup is a skinny version of loaded baked potato soup that I lightened up to make it WW friendly and lower calorie!

How to Make This:

Ingredients:

  • 2 medium Uncooked potatoes, about 10 oz

  • 2 Tbsp Brummel & Brown Spread Made with Yogurt

  • 1 medium Uncooked sweet onion

  • 2 Tbsp All-purpose flour

  • 4 cups Fat free chicken broth

  • 2 cups Water

  • 5 Tbsp Cornstarch

  • 1 1⁄2 cup Instant mashed potatoes

  • 2⁄3 cup Kroger Reduced fat sharp cheddar finely shredded cheese, divided

  • 1 1⁄2 cup Fat Free Half & Half

  • Black pepper to taste

  • 1⁄2 tsp Dried basil

  • 1⁄8 tsp Dried thyme

  • 4 slices bacon, cooked

  • 1⁄4 cup green onions, chopped

Instructions:

  1. Melt the butter spread in a large pan, on medium heat.

  2. Add the diced onions and saute until translucent.

  3. Add garlic and cook another minute.

  4. Add the flour to the onions, stirring to incorporate them, cook for about a minute.

  5. Dissolve the cornstarch in the cold water.

  6. Add the broth, dissolved cornstarch water, instant mashed potato flakes, and seasonings and stir.

  7. On medium-high heat, bring the mixture to a boil, stirring often.

  8. Reduce heat and simmer for 5 minutes.

  9. Cut the baked potatoes in half lengthwise, and cut in their skins, to make small bite-sized pieces.

  10. Scoop out the potatoes and add them, 1/3 cup cheese and half & half to the soup, stirring to combine all the ingredients.

  11. Bring it back to a boil, then reduce heat and simmer the soup for another 12-15 minutes, stirring every couple of minutes.

  12. Top each serving with about 1 1/2 tsp remaining cheese, bacon and green onions.

  13. Enjoy!
