Chicken Cordon Bleu Casserole

This casserole is so good! I saw it and knew I had to lighten it up! It is like having Chicken cordon bleu in an easy casserole form!

How to Make This:

Ingredients:

  • 2 Tbsp Brummel & Brown Spread Made with Yogurt

  • 1⁄2 cup Uncooked red onion, chopped

  • 3 tsp Minced garlic

  • 1 tsp Dried thyme

  • 1⁄2 tsp Granulated garlic

  • 2 1⁄2 cups Canned chicken broth

  • 1 1⁄4 cup Uncooked long grain brown rice

  • 10 3⁄4 fl oz Campbell's Condensed Soup 98% Fat free cream of chicken

  • 1⁄2 cup Plain fat free Greek yogurt

  • 8 fl oz Plain unsweetened almond milk

  • 2 tsp Dijon Mustard

  • 1 cup Kroger Reduced fat 4 cheese Mexican blend finely shredded cheese

  • 1⁄3 cup Kroger Parmesan Finely Shredded Cheese

  • 1 cup Cooked skinless boneless chicken breast, chopped

  • 8 oz Kroger Sliced Canadian bacon, chopped

  • 8 slices Reduced-fat swiss cheese slices

  • 1⁄3 cup Seasoned breadcrumbs

Instructions:

  1. In a large pan on medium heat, Melt butter spread.

  2. Add in diced onions. Cook until softened.

  3. Add the garlic, garlic powder, and thyme. Cook for one more minute.

  4. Add chicken broth, and rice (that has been rinsed) and stir.

  5. Increase heat to high and bring to a boil.

  6. Reduce the heat to low, cover and let simmer for 15 minutes. Do not stir.

  7. Turn off heat, leave the lid on and let it sit for 10 minutes.

  8. Add the soup, Greek yogurt, milk, Dijon mustard, Mexican blend cheese, Parmesan cheese, chicken and Canadian bacon.

  9. Stir well to combine.

  10. Spray a 9 x 13 casserole dish with cooking spray and pour in mixture.

  11. Top with Swiss cheese slices.

  12. Cover and bake at 375F for 15 minutes.

  13. Sprinkle breadcrumbs over the top of the casserole and bake for an additional 15 minutes, uncovered.

  14. Enjoy!
