Cheesy Potato Casserole- Lightened Up🧀🥔
This lightened up comfort food is a cheesy hash brown casserole with a crispy cornflake topping. Perfect side dish to make for holidays or anytime!
How to Make This:
Ingredients:
1 (30 ounce) package Shredded Hash Brown Potatoes- slightly defrosted
1 (10.5 ounce) can condensed cream of chicken soup 98% fat free
2 cups fat free Greek yogurt
½ teaspoon salt
¼ teaspoon ground black pepper
2 cups shredded Cheddar cheese reduced fat
1/2 cup sliced green onions
1 1/2 cups crushed corn flakes cereal
2 tbsp Brummel and brown, melted
nonstick cooking spray
Instructions:
Preheat oven to 350 F°.
Mix yogurt, soup, salt, and pepper together in a large bowl.
Stir in cheese, green onions, and hash brown potatoes until well mixed.
Spray 13X9 baking dish with nonstick cooking spray.
Spread potato mixture evenly into the prepared baking dish.
Mix crushed cereal and melted butter together in a medium bowl.
Sprinkle evenly over the casserole.
Bake, at 350 F, uncovered, until cooked through and bubbly, about 45 to 50 minutes.
Let rest for 5-10 minutes before serving.
Spray a 9x13-inch baking dish with spray.
