Cauliflower Mac & Cheese
This Skinny version of cauliflower mac and cheese gives you all the flavors of comfort food mac and cheese without all the calories/points or guilt!
How to Make This:
Ingredients:
24 oz Frozen Cauliflower
4 oz Uncooked chickpea pasta
3 Tbsp Brummel & Brown Spread Made with Yogurt
1 small onion, chopped
1 tsp Minced garlic
1⁄4 cup All-purpose flour
1 cup Canned chicken broth
2 cups Plain unsweetened almond milk
1⁄2 tsp Dry mustard
1 1⁄2 cup Kroger Reduced fat finely shredded sharp cheddar cheese
1⁄4 cup Kroger Grated parmesan cheese
1⁄2 cup Kroger Mozzarella part skim finely shredded cheese
1⁄2 cup Plain fat free Greek yogurt
Instructions:
Bring a large pot to boil and cook pasta and cauliflower together until pasta is Al dente.
Heat a large pan on low heat and add butter spread.
Once butter spread is melted, add onions and cook about a minute.
Add in garlic and cook a minute more.
Add flour and cook for 2-3 minutes, until slightly browned.
Add in broth and milk and stir well.
Turn up heat to med/high and bring mixture to a boil.
Stir continuously and cook until mixture is thickened, about 8-10 minutes.
Once thickened, remove from heat and mix in mustard, pepper to taste and all but about 1 cup of cheeses and yogurt.
Stir in drained pasta and cauliflower.
Pour into 9X9 casserole dish, sprayed with cooking spray.
Top with remaining cheese and bake at 375 for 15-20 minutes.
