Broccoli Cheese Soup Lightened Up

This cheesy broccoli soup is the perfect warm comfort food on a cold day. It is healthy, delicious and low in points and calories!

How to Make This:

Ingredients:

  • 12 oz broccoli florets, cut into bit sized pieces

  • 1 large onion, chopped

  • 1 cup carrots, chopped

  • 1 large potato (10 oz) chopped

  • 1 cup low fat shredded cheese

  • 1/2 cup fat free Greek yogurt (or fat free sour cream)

  • 3 1/2 cups fat free chicken broth

  • 1 Tbsp minced garlic

  • 1 Tbsp flour

  • 1/2 tsp dry mustard

  • 1/4 tsp paprika

  • 1/4 tsp nutmeg

  • 1 tsp salt (if desired)

  • 1/2 tsp pepper

Instructions:

  1. Spray large saucepan with nonstick cooking spray on medium/high heat.

  2. Add onion and carrot and cook until the onion softens.

  3. Add potato and garlic, cook for another 1-2 minutes.

  4. Stir in flour, mustard, nutmeg and paprika and cook for another 2 minutes, stirring often.

  5. Add broth and ground pepper and bring to a boil.

  6. Cover and reduce heat to medium low.

  7. Simmer, stirring occasionally for about 10 minutes.

  8. Stir in broccoli and continue to simmer, covered, until broccoli is tender about 10-15 minutes.

  9. Remove about 2 cups of the vegetables and mash then stir back in.

  10. Stir in cheese until melted, turn off heat and stir in Greek yogurt until mixed in.

  11. Enjoy!
