Strawberry Lemon Loaf Cake๐Ÿ“๐Ÿ‹

This easy to make, moist and soft lemon cake has a fresh citrus flavor paired with fresh strawberries, that is perfect for spring or summer.

How to Make This:

Ingredients:

  • 1 1โ„2 cups All-purpose flour

  • 1 1โ„2 tsp Baking powder

  • 1โ„4 tsp Baking soda

  • 1โ„4 tsp salt

  • 1โ„2 cup Monkfruit sweetener(or no calorie granulated sweetener of choice)

  • 3 large Eggs

  • 1 cup Plain fat free Greek yogurt

  • 1โ„4 cup Vegetable oil

  • 1โ„4 cup Unsweetened applesauce

  • 1 tsp Vanilla extract

  • Fresh lemon juice 2 Tbsp for cake, 1 tsp for glaze

  • Lemon zest 4 tsp, 3 for cake, 1 for glaze

  • Fresh strawberries 1 1โ„2 cups, 1 cup for cake, 1/2 cup for glaze

  • 1โ„2 cup Lakanto Monkfruit Sweetener, powdered(or no calorie/point sweetener of choice)

Instructions:

  1. Zest and juice your lemons.

  2. In a medium bowl, add the flour, baking powder, baking soda, and salt, stir until combined. In a large mixing bowl or mixer, add the eggs, granulated sweetener, and yogurt. mix until smooth.

  3. Add oil and applesauce and mix again.

  4. Add 2 Tbsp lemon juice, 1 Tbsp lemon zest, and vanilla extract then mix again.

  5. Slowly mix into moist ingredients, and mix until just combined, don't overmix.

  6. Some lumps may still remain.

  7. Pour batter into a prepared 9X5 loaf pan. Bake at 350 for 50-55 minutes or until a toothpick inserted in the middle comes out clean.

  8. Allow to cool completely in the pan.

  9. To make the glaze, puree or mash remaining 1/2 cup strawberries.

  10. Whisk together powdered sweetener, strawberries and about 1 tsp lemon juice and zest. You can add more juice if you want a thinner glaze.

  11. Once cake is cooled, spread glaze over the top.

  12. Store leftovers in an airtight container in the fridge for 4-5 days.

  13. Enjoy!
