Strawberry Lemon Loaf Cake๐๐
This easy to make, moist and soft lemon cake has a fresh citrus flavor paired with fresh strawberries, that is perfect for spring or summer.
How to Make This:
Ingredients:
1 1โ2 cups All-purpose flour
1 1โ2 tsp Baking powder
1โ4 tsp Baking soda
1โ4 tsp salt
1โ2 cup Monkfruit sweetener(or no calorie granulated sweetener of choice)
3 large Eggs
1 cup Plain fat free Greek yogurt
1โ4 cup Vegetable oil
1โ4 cup Unsweetened applesauce
1 tsp Vanilla extract
Fresh lemon juice 2 Tbsp for cake, 1 tsp for glaze
Lemon zest 4 tsp, 3 for cake, 1 for glaze
Fresh strawberries 1 1โ2 cups, 1 cup for cake, 1/2 cup for glaze
1โ2 cup Lakanto Monkfruit Sweetener, powdered(or no calorie/point sweetener of choice)
Instructions:
Zest and juice your lemons.
In a medium bowl, add the flour, baking powder, baking soda, and salt, stir until combined. In a large mixing bowl or mixer, add the eggs, granulated sweetener, and yogurt. mix until smooth.
Add oil and applesauce and mix again.
Add 2 Tbsp lemon juice, 1 Tbsp lemon zest, and vanilla extract then mix again.
Slowly mix into moist ingredients, and mix until just combined, don't overmix.
Some lumps may still remain.
Pour batter into a prepared 9X5 loaf pan. Bake at 350 for 50-55 minutes or until a toothpick inserted in the middle comes out clean.
Allow to cool completely in the pan.
To make the glaze, puree or mash remaining 1/2 cup strawberries.
Whisk together powdered sweetener, strawberries and about 1 tsp lemon juice and zest. You can add more juice if you want a thinner glaze.
Once cake is cooled, spread glaze over the top.
Store leftovers in an airtight container in the fridge for 4-5 days.
