SKINNY Starbucks Copycat Cranberry Bliss Bars
These lightened up cranberry bliss bars have all the flavor of the original with way less calories and points! They make a perfect festive treat for the Holidays!
How to Make This:
Ingredients:
For the bread:
2 cups all purpose flour
1 tsp baking powder
1/4 tsp salt
1 teaspoon ground ginger
1/3 cup Lakanto classic
2/3 cup Lakanto golden
6 Tbsp melted brummel and brown
2 large eggs
1/2 cup unsweetened apple sauce
1 tsp orange zest
1 tsp vanilla extract
1 tsp orange extract
100 g (½ cup) Lily’s white chocolate baking chips
2/3 cup dried cranberries, chopped- divided
Cooking spray for pan
For the drizzle:
50 g (¼ cup) white Lilys baking chips
1/2 tsp coconut oil
For the cream cheese frosting:
1/4 cup Lakanto Monkfruit Sweetener, powdered
1 Tbsp Plain fat free Greek yogurt
1/2 tsp Vanilla extract
4 oz Low fat cream cheese
½ tsp orange zest
Instructions:
Preheat oven to 350°F.
In a large bowl, combine the flour, baking powder, salt and ground ginger and stir to blend.
In another bowl or mixer, add the sweeteners with the butter spread, eggs, applesauce, orange extract, vanilla and 1 tsp orange zest and mix until light and fluffy.
Slowly add the dry ingredients into the wet ingredients until the batter is very well blended.
Fold in 100 g white chocolate chips and 1/3 cup cranberries.
Prepare a 10x15 baking sheet by lining it with parchment paper or use a non-stick spray.
Spread batter onto the baking pan as evenly and smoothly as possible.
Bake at 350°F. for 20-24 minutes until light brown and a toothpick inserted in center comes out clean. Don't overbake or your bars will be dry.
Let cool completely.
For the Cream Cheese Frosting: In a large bowl whip together the cream cheese, Tbsp Greek yogurt, powdered sweetener, ½ orange zest and 1/2 tsp vanilla until no lumps remain.
Frost the bars when cooled. Sprinkle with remaining cranberries.
For the Drizzle: Add 50 g white chocolate chips and coconut oil in a microwave safe container.
Microwave 15 seconds at a time, stirring in between, until melted. Use a fork or whisk to drizzle the white chocolate diagonally across the bars.
Refrigerate for one hour to allow the white chocolate to set before cutting.
To make signature Starbuck triangles, cut into 16 large squares (4 cuts by 4 cuts with a knife). Then cut each square in half diagonally to create triangles.
