This lightened up version of Monkey bread has all the traditional gooey sweetness and buttery cinnamon flavors without all the calories or WW points! With no sugar or butter, it is definitely healthier than the classic version, but no one will know the difference and you won't have all the guilt!

How to Make This:

Ingredients:

  • For the dough:

  • 2 cups self rising flour (plus ⅛ cup to knead and roll out dough)

  • 2 Tbsp powdered Lakanto

  • 1 1/2 cup fat free plain Greek yogurt (340g)

  • 1 Tbsp Vanilla

  • 1 egg

  • (cooking spray for pan)

  • coating:

  • ½ cup classic Lakanto with Allulose

  • 1 ½ tsp cinnamon

  • Syrup:

  • 1/2 cup butter spread (Brummel and Brown) 112 g

  • ¼ cup almond milk

  • 1 cup golden Lakanto with Allulose

  • 1/2 teaspoon cinnamon

  • 1 teaspoon vanilla

Instructions:

  1. Preheat oven to 350°F.

  2. Add ½ cup classic Lakanto and 1 ½ tsp cinnamon to a ziplock bag and shake. Set aside.

  3. To make the dough; in large bowl, combine flour and 2 Tbsp powdered sugar in a large mixing bowl.

  4. In an medium mixing bowl, combine 1 1/2 cups yogurt, 1 egg, and 1 Tbsp vanilla.

  5. Add yogurt mixture to flour mixture and stir until dough forms.

  6. Knead dough on floured surface for about 2 minutes.

  7. Once kneaded, cut dough in half and roll each half out to about 1/2 inch thickness. Cut into pieces.

  8. Add dough pieces to ziplock bag and shake to cover all pieces, separating them as needed. They will stick together.

  9. Transfer coated biscuit pieces to a bundt pan prepared with cooking spray.

  10. For the syrup: Combine 1 cup Golden Sweetener, milk, butter spread, 1 tsp cinnamon and 1 tsp vanilla, in a small saucepan.

  11. On med-high heat, bring to a low boil. Cook, stirring constantly, 1 minute.

  12. Remove syrup from heat; set aside to cool for about 5 minutes.

  13. Pour syrup mixture over the biscuit pieces.

  14. Bake at 350F until golden brown and cooked through, about 35–40 minutes.

  15. Let cool slightly, about 10 minutes.

  16. Turn pan upside down onto a large plate, and gently shake to release the monkey bread.

  17. Enjoy!
