Skinny Pumpkin Chocolate Chip Banana Bread

This easy, lightened up Fall treat combines Pumpkin bread and banana bread together with chocolate chips!

How to Make This:

Ingredients:

  • 2 cups All-purpose flour

  • 1 tsp Baking powder 1 tsp Baking soda

  • 1⁄2 tsp Table salt

  • 2 tsp Pumpkin pie spice my homemade recipe

  • 1⁄4 cup Maple syrup (WW Pts and nutritional info factored with Maple syrup but I now use zero calorie Lakanto maple flavored syrup to lower pts more)

  • 2 medium Bananas

  • 1 cup Canned pumpkin puree

  • 1⁄4 cup Unsweetened applesauce

  • 1⁄2 cup Plain fat free Greek yogurt

  • 2 tsp Vanilla extract

  • 1 Tbsp Coconut oil

  • 2 large Eggs

  • 1⁄4 cup Green pumpkin seeds (pepitas)

  • 70 gm Lily's Semi-Sweet Style Baking Chips Member's Mark

  • Olive oil non stick cooking spray

Instructions:

  1. In a medium bowl, add in flour, baking powder, baking soda, salt and pumpkin pie spice, and mix well.

  2. In a large bowl, add bananas and mash.

  3. Add remaining ingredients, minus the chocolate chips and pumpkin seeds, and mix well.

  4. Fold in chocolate chips.

  5. Spray a bread pan with cooking spray and pour in batter, smoothing it out.

  6. Sprinkle pumpkin seeds on top.

  7. Bake at 350F for 60-70 minutes or until a toothpick inserted in the middle comes out clean.

  8. Let baked bread sit in the pan for 5-10 minutes before removing to a wire rack to cool.

  9. Enjoy!
