EASY Apple Cider Doughnut Muffins

These easy Fall inspired cider doughnut muffins taste like an apple cider doughnut but in a muffin form!

How to Make This:

Ingredients:

  • 2 cups All-purpose flour

  • 2 1⁄2 tsp Apple pie spice, divided, 1 1/2 tsp for muffins, 1 for topping (My homemade apple pie spice)

  • 1 tsp Baking powder

  • 1⁄2 tsp Baking soda

  • 1⁄2 tsp Table salt

  • 1⁄3 cup Lakanto Monkfruit sweetener with erythritol, classic

  • 3 Tbsp Sugar

  • 1 cup Unsweetened applesauce

  • 1⁄2 cup Apple cider

  • 2 large Eggs

  • 1 Tbsp Coconut oil

  • 1 tsp Vanilla extract

Instructions:

  1. In a medium bowl, whisk together the flour, baking soda, baking powder, apple pie spice, and salt.

  2. In a large bowl, whisk together the apple sauce, apple cider, sweetener, coconut oil, vanilla and lightly beaten eggs.

  3. Mix until well combined.

  4. Pour the dry ingredients into the wet and fold in just until combined.

  5. In a lined muffin tin, fill 12 cups.

  6. Mix sugar and remaining apple pie spice together.

  7. Sprinkle on tops of muffins.

  8. Bake at 350 for 20-22 minutes.

  9. Let them cool for about 5 minutes then remove from muffin tin to cool on a wire rack.

  10. Enjoy!
