Skinny Cranberry Banana Bread
If you love banana bread and cranberries you will love this sweet and tart Fall inspired bread!
How to Make This:
Ingredients:
1 cup all purpose flour
2/3 cup whole wheat flour
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
3/4 cup sugar (points and nutritional info below are factored with sugar, but I now use Lakanto Classic Monk Fruit Sweetener With Allulose)
3 Tbsp canola oil
2 eggs
3 ripe bananas
1 cup fresh, chopped cranberries cooking spray
Instructions:
Combine the flours, baking soda, salt, cinnamon and nutmeg together in medium sized bowl.
In a mixer, mix together sugar and canola oil for about 2 minutes until sugar starts to dissolve.
Mix in eggs and bananas.
Fold in dry ingredients and cranberries.
Pour batter into 9X5 loaf pan, lightly sprayed with cooking spray.
Bake at 350 for 45-60 minutes or until toothpick comes out clean.
Let cool for 10 minutes then turn loaf out of pan onto a cooling rack. Makes 12 3/4 inch slices.
