SKINNY Chocolate Peppermint Bread🍫🍬

This festive bread combines the sweet rich flavors of chocolate with refreshing peppermint in a moist and delicious bread that’s perfect for the holidays. It’s also easy to make!

How to Make This:

Ingredients:

  • For the bread:

  • ½ cup applesauce

  • 1 Tbsp Coconut oil, melted

  • 1/3 cup Lakanto classic

  • 2/3 cup Lakanto Golden

  • 1 cup Fat Free Greek yogurt (a thick consistency yogurt like Fage works best!)

  • 3 eggs

  • 1/4 tsp peppermint extract

  • 1 1/3 cup all purpose flour

  • 2/3 cup unsweetened cocoa powder

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 1 tsp espresso powder

  • 1/2 tsp kosher salt

  • 10 Bobs peppermint candy, crushed (50g)

  • 50 gm Lily's Semi-Sweet Style Baking Chips

  • Cooking spray

  • For the glaze:

  • 1 cup Powdered Lakanto

  • 2-4 Tbsp almond milk

  • 1/8 teaspoon Peppermint Extract

  • remaining Crushed peppermints

Instructions:

  1. Preheat oven to 350°F.

  2. In a medium bowl, add the flour, cocoa powder, baking soda, baking powder, espresso powder and salt, and mix using a whisk.

  3. In a mixer, add the oil, sweeteners and applesauce and mix together until combined.

  4. Add in the eggs, Greek yogurt and ¼ tsp peppermint extract and mix until combined.

  5. Gradually add in the dry ingredients and continue to mix on low speed until combined.

  6. Fold in the chocolate chips and most of the crushed peppermints, reserving some to top the bread.

  7. Spray a bread pan with cooking spray, lay a piece of parchment paper in it and spray the parchment.

  8. Pour batter into prepared loaf pan and bake for 50-55 minutes, or until toothpick inserted in middle comes out clean. Baking times will vary depending on oven, bakeware, elevation, etc.

  9. Let the bread cool in the loaf pan for 10-15 minutes before removing to cool on a wire rack.

  10. To prepare the glaze, add powdered Lakanto, milk, and ⅛ tsp peppermint extract, and whisk until smooth.

  11. Let bread cool completely, pour glaze over bread, and top with remaining crushed candy peppermints.

  12. Enjoy!
