Pumpkin Cheesecake Cookies
Creamy ricotta pumpkin filling on a chocolate pizzelle cookie topped with chocolate chips!
How to Make This:
Ingredients:
1 cup Part skim ricotta cheese
4 Tbsp WW Reduced-fat whipped cream cheese spread
8 Specially Selected Dark chocolate pizzelle cookies
1 Tbsp Mini chocolate chips
1 oz Fat-free sugar-free instant vanilla pudding mix
2⁄3 cup Pumpkin puree
1 tsp Pumpkin pie spice
1⁄4 cup Plain fat free Greek yogurt
Instructions:
In a mixer, add in ricotta, cream cheese, pumpkin, pudding mix,
Greek yogurt and pumpkin pie spice.
Blend until well combined.
Transfer to pipping bag and pipe onto cookies.
Sprinkle with chocolate chips.
Enjoy!
