Pistachio Cake
Quick and easy pistachio cake that uses a cake mix!
How to Make This:
Ingredients:
1 white cake mix
3 egg whites
3 1/2 cups diet Sprite (divided)
1 -1 ounce package of sugar free instant pistachio pudding
8 oz of fat free whipped topping
cooking spray
1/4 cup pistachios, chopped (optional)
Instructions:
For the cake,
Mix together cake mix, egg whites and 2 1/2 cups of Sprite, mix well in mixer or by hand.
Spray an 9X13 pan with cooking spray and pour mixture in pan.
Bake at 350 for 30-35 minutes.
Let cool completely.
For the frosting,
Mix together whipped topping, pudding mix and remaining soda until all incorporated.
Evenly spread over the top of cooled cake and refrigerate for a couple of hours, overnight is even better!
Top with chopped pistachios before serving.
