Pistachio Cake

Quick and easy pistachio cake that uses a cake mix!

How to Make This:

Ingredients:

  • 1 white cake mix

  • 3 egg whites

  • 3 1/2 cups diet Sprite (divided)

  • 1 -1 ounce package of sugar free instant pistachio pudding

  • 8 oz of fat free whipped topping

  • cooking spray

  • 1/4 cup pistachios, chopped (optional)


Instructions:

  1. For the cake,

  2. Mix together cake mix, egg whites and 2 1/2 cups of Sprite, mix well in mixer or by hand.

  3. Spray an 9X13 pan with cooking spray and pour mixture in pan.

  4. Bake at 350 for 30-35 minutes.

  5. Let cool completely.

  6. For the frosting,

  7. Mix together whipped topping, pudding mix and remaining soda until all incorporated.

  8. Evenly spread over the top of cooled cake and refrigerate for a couple of hours, overnight is even better!

  9. Top with chopped pistachios before serving.

  10. Enjoy!
